Kala Namak is a type of mineral salt that is mostly used in Indian cuisine. Its herby and sulfurous aroma and flavor are good matches for other strong savory flavors. It has a high mineral content and a distinctive egg-like aroma. Use in vegan cooking to mimic eggs. Add to stir fry vegetables or salad dressings and try it sprinkled on fruit, like mango. Traditionally used as an ingredient in Indian and Pakistani cuisine to heighten flavor of chaat and other snacks, or to flavor sauces like chutney or raita.
