Originating in Trapani, Western Sicily, Busiate pasta is rarely found off the island. Traditionally prepared with durum wheat semolina flour and water, this unique rendition of the spiral-shaped pasta has fresh cuttlefish ink folded straight into the dough. The unique and exclusive Busiate al Nero di Seppia boasts the briny, savory flavors of the Mediterranean Sea.
Busiate is a long, corkscrew-shaped pasta known for its ability to hold onto all kinds of sauces, particularly thicker ones like pesto or tomato ragù. The ridges and coils created by the shaping process provide more surface area for the sauce to cling to, resulting in a flavorful bite in every mouthful.
Cuttlefish ink culinary use: Cuttlefish ink is prized in Mediterranean cuisine and, while not as common as squid ink, cuttlefish ink is generally considered to have a more pleasant flavor, described as slightly sweeter and less intense.
